Our gold medal winner is named for the famed Provencal wind, the Mistral, which is so much in the character and essence of the region. It is made of varieties of trees we imported from France in 1997. We are very excited about it, as it represents the beginning of our new adventure in various styles of oil. Aglandau, Salonenque, Grossane, and Picholine are typical varieties from the Bouche de Rhone, where they make an oil similar to our Mistral blend. We sent samples to our friends and mentors there, and were gratified to hear two comments in particular: that our oil truly contained the essence of those varieties, and that the essence was more "vivid", most likely due to the growing conditions of our Sierra Foothills. The oil is soft, rounded, and buttery like its French cousins, with the extra flavor and tang that mountain fruit provides.
Apollo Olive Oil, based in the Sierra Foothills, has been awarded 12 medals in the last five years from the Los Angeles County Fair! The Fair's olive oil competition is the most prestigious of its kind in North America.
The hand harvested olives are processed in their mill within an hour of picking. Along with a steadfast focus on quality, a highly sophisticated milling system really sets Apollo Olive Oil apart. In fact, Apollo is the only producer in the United States currently using this specialized vacuum system that significantly limits exposure to oxygen during the milling process – the key to producing oil extraordinarily high in healthy antioxidants and polyphenols. The 100 percent cold-extracted oils have deep varietal character
and intense flavors.
